Multi-grain bread

A healthy weekend motivation! The weekend is here and my taste buds have already started giving me hints as to what flavors they’d like this weekend. And I’m like, hello..!! Hang on, there’s something healthy I have on my mind 😉

Multigrain bread – fresh from the oven!

This is a super easy recipe, and super healthy too. Here’s the recipe ~

Ingredients

  • Yeast – 1.5 teaspoon
  • Sugar – 1 teaspoon
  • A pinch of salt
  • 2 tablespoon milk powder
  • Oats flour – 1 cup
  • Whole wheat flour – 1/2 cup
  • Ragi flour and Chickpea flour (or any other flour of your choice) – 1/3 cup each
  • Chia seeds, Sesame seeds, Flax seeds, rolled oats – 1 and half tablespoon
  • Oil for greasing the pan

Recipe

  • Add yeast and sugar in half cup lukewarm water and let it rest for 15 minutes
  • In another bowl soak about 1 tablespoon of the seeds in 2-3 tablespoon of lukewarm water (save of the remaining seeds for later)
  • In a mixing bowl add all the flours, milk powder and a pinch of salt
  • After 15 minutes add the yeast mixture and the soaked seeds to the flour and mix
  • Knead the mixture for about 15 minutes and then let it rest for 40 minutes in a greased bowl
  • After 40 minutes knead the flour for another 5 mins and coat it with the remainder of the seeds
  • Grease a bread mould and transfer the flour into it
  • Bake the bread in a pre-heated oven @180 degrees for 35-40 minutes

Enjoy it guilt free as a side dish with a little garlic butter or toast them as a side for your salad.

Apple crumble muffins

An ultimate recipe for those sweet cravings..!! These do not take much time to prepare, and can be savoured for up to 2-3 days. Their shelf life is a less as apples go into the muffin dough, and once cooked should be consumed within 2-3 days.

Ingredients

  • Milk – 1/2 cup
  • Vegetable oil – 1/3 cup
  • Egg – 1
  • Vanilla essence – 1 teaspoon
  • All purpose flour – 1 and 1/4 cup
  • Powdered sugar – 3/4 cup
  • Baking powder – 2 teaspoons
  • Salt – 1/4 teaspoon
  • Apples – 2 finely chopped
  • For the crumble –
    • All purpose flour – 1/2 cup
    • Brown sugar – 1/2 cup
    • Cinnamon powder – 1/2 teaspoon
    • Butter – 1/4 cup

Method

  • In a bowl mix the milk, oil, egg and vanilla essence. Whisk until combined
  • In a separate bowl seive and mix – flour, powdered sugar, baking powder
  • Add the apples to the flour mixture and combine it together
  • Then add the egg mixture and mix until combined
  • Pour the mix in a greased muffin tray
  • For the crumble in a separate bowl add these ingredients – flour, brown sugar, butter and cinnamon powder
  • Mix with hands and combine the crumble
  • Sprinkle the crumble mix on the muffins (1 and 1/2 teaspoon on each muffin)
  • In a pre heated owen, bake the muffins at 180° C for 20-25 minutes

Baked eggs with veggies

This is an awesome breakfast recipe. The apt protein kick required for starting the day. It’s an easy and quick one.

Right before going in the oven..!!
The end result ~ Nice and fluffy..!!
Served with a side of toasted bread sticks..!!

Ingredients:

  • Eggs – 4
  • Salt – 1/2 teaspoon or as per taste
  • Pepper – 1/4 teaspoon
  • Veggies of your choice – 1/2 cup finely chopped
  • Cheese – 1 tablespoon
  • Dried herbs – 1/2 teaspoon

Method:

  • In a bowl, whisk the eggs for at least 7-10 minutes or until it fluffs
  • Add salt and pepper and mix
  • Transfer the mixture into a pan
  • Gently place the veggies on the egg
  • Srpinkle the cheese and mixed herbs on top of it
  • Bake in a pre heated oven at 170°C for 10-12 minutes

Garlic bread sticks

Garlic bread sticks are an absolute favorite! When made with a healthier substitute (wheat flour), they are irresistible. So here’s the recipe.

Ingredients:

  • Lukewarm water – 1/4 cup
  • Dry instant yeast – 1 teaspoon
  • Sugar – 1 teaspoon
  • Wheat flour – 1 cup
  • Salt – 1/4 teaspoon
  • Chilli flakes – 1/2 teaspoon
  • Oregano – 1/2 teaspoon
  • Unsalted butter – 2 tablespoon
  • Crushed garlic – 1 tablespoon
  • Mozzarella cheese grated – 1/2 cup

Method:

  • Combine the sugar and dry yeast with water
  • Mix and set aside for 5-7 mins (till the yeast activates)
  • In a bowl sieve and mix – the flour, salt, chilli flakes and oregano
  • Add the yeast mixture to the flour and knead
  • Add 2 tablespoons of water and then stretch and knead the dough for 5-7 minutes
  • Apply a coat of oil and keep aside for 1-2 hours
  • In a separate bowl make a mixture of the crushed garlic and butter and keep aside
  • After 2 hours, the dough rises twice in size
  • Deflate the dough and knead for a minute
  • Roll the dough in a round shape and fill the garlic mixture on half of it, leaving the edges out
  • Sprinkle the cheese on top of the garlic mixture
  • Brush water on the edges of the circle and seal it to form a semicircle
  • Place the bread on a pizza pan
  • Brush the sealed bread with remaining garlic butter
  • In pre-heated oven at 200 degree Celsius, bake the bread for 10-12 minutes at 200 degrees Celsius.
